Zacieranie w ziarnie przy wędzeniu

No właśnie czy możliwe jest przeprowadzenie na przykład ferulikowej na sucho w dymie o temperaturze 40°C.

Ewentualnie mógł bym słód namoczyć 1 dobę przed dymieniem ale potem trzeba by to wysuszyć wolał bym na sucho na lenia.

wogule to nawet dało by się przeprowadzić cały proces zacierania podczas dymienia i nawet namoczony przed dymieniem słód zmielić i zaprażyć.

Pytam bo zamierzam trochę zadymić słód pszeniczny i mam możliwość dokładnego sterowania temperaturą dymu

swoją drogą Weyermann wędzony bardzo mnie zawiódł
